What do you think happened after Third Impact?

I'd at least hope that everyone came back from the sea of orange juice and returned to their normal lives like Third Impact didn't happen. Or, Shinji and Asuka could've been the last two humans on the entire planet. If that's the case, then humanity would be doomed for extinction in post- Third Impact world. What do you think happened?
